In Chile buckwheat is sold as trigo sarraceno, "Saracen wheat", but it is the seed of a plant related to rhubarb, not a cereal. It has nothing to do with wheat, barley or rye, so it contains no gluten. In Russia and Eastern Europe it is an everyday staple; in Chile it is a real option for anyone living gluten-free.

Altai, in southern Siberia, is a land of steppes and mountains with short summers and clean soil. That is where Alekó buckwheat is grown, without chemical fertilizers.

One cup of groats to two cups of salted water. Bring to a boil, cover and simmer for 15 minutes, then let it rest for 5. No soaking needed.
Both are gluten-free seeds. Buckwheat has a stronger, nutty flavor and doesn't need rinsing to remove saponins. It cooks in the same time.
