Buckwheat with spinach and onion
Alekó buckwheat with spinach, fried onion and a squeeze of lemon. An unusual pairing that is well worth a try.

Method
- Bring the water to a boil with some of the salt, add the buckwheat and cook, covered, for 15 minutes.
- Take off the heat and leave covered for about 10 minutes to finish steaming.
- Meanwhile, chop the onion and fry it in the oil until golden.
- Blanch the spinach in boiling water for 5 minutes, cool it in cold water and squeeze it dry.
- Chop the spinach and dress it with the lemon juice.
- Mix the buckwheat with the onion and spinach, adjust the salt and pepper and serve.
